Welcome to Bird City, a remarkable wildlife refuge located on Avery Island, Louisiana. Established in 1895 by Edward Avery McIlhenny, this sanctuary stands as a testament to conservation efforts that began over a century ago. McIlhenny, an heir to the Tabasco sauce fortune, was not only a successful businessman but also a dedicated naturalist. Alarmed by the near extinction of the snowy egret due to plume hunting in the fashion industry, McIlhenny decided to take action. He created a ‘flying cage’ aviary on his estate, allowing the egrets to adapt and eventually migrate. His efforts were a success, and by 1911, Bird City had become a thriving rookery for thousands of egrets.
Bird City is part of the Jungle Gardens, a 170-acre botanical masterpiece also established by McIlhenny. The gardens feature a diverse array of flora, including azaleas, camellias, and bamboo, creating an enchanting environment for both wildlife and visitors. Theodore Roosevelt once praised Bird City as ‘the most noteworthy reserve in the country.’
Avery Island itself has a rich history, being a salt dome that has been used by humans for centuries. In the mid-1800s, Edmund McIlhenny, Edward’s father, began the production of the iconic Tabasco sauce here, using the island’s resources. Today, Avery Island continues to be the sole production site of the world-famous sauce.
